Salmon Patties

Ok, I know what some of you are thinking. Yuck, but I promise if you like fish you will love these. I like to eat them with fried potatoes.

1 pouch pink salmon
1/8 cup green bell peppers
1/8 cup mayonnaise
1 tablespoon lemon juice
1/4 teaspoon salt
to taste cayenne pepper
1 large egg, beaten
1 cup saltine crackers, mashed
3 tablespoon olive oil

1.In medium bowl, gently flake salmon.
2.Stir in remaining ingredients except olive oil.
3.Divide and form mixture into 6-8 balls.
4.In a lightly oiled skillet over medium heat, fry cakes until golden brown on both sides.
