Cookies

This website has some pretty good techniques for baking cookies:

My fav tip: "A baking or cookie sheet should be either cool or at room temperature when the cookie dough is placed on it; otherwise, the dough will start to melt, adversely affecting the cookies' shape and texture." I have found that if you just wait for the pan to cool down before the next batch then the cookies won't flatten out.
